Ingredients
  

Dough

  • 400 g all-purpose flour
  • 5 pods cardamom
  • 250 ml milk
  • 80 g butter
  • 40 g confectioners sugar
  • ½ teaspoon salt
  • 7 g dry yeast
  • 1 unit egg

Filling

  • 7 pods cardamom
  • 10 g vanilla sugar
  • tsp cinnamon
  • tbsp confectioners sugar
  • 120 g butter
  • 50 g walnuts Crushed

To brush the buns

  • 1 unit egg yolk
  • 1 tbsp milk
  • 1 pinch salt

Instructions
 

Dough

  • Pour 250 ml of milk into a saucepan, add 80 g of butter, and place on medium heat until the butter dissolves while the milk is getting warm.
    Be careful❗️Do not overheat the milk-butter mix because exposure to a temperature above 40°C can kill the yeast.
  • Sift 400 g of flour into a large bowl.
  • Add 40 g of confectioners sugar and half teaspoon of salt.
    Mix thoroughly before adding yeast. This is because mixing directly yeast and salt may slow down yeast activity.
    Add 7 g of dry yeast and mix well.
  • Grind 6-7 cardamom pods (only seeds, no shell), Add it to the flour mix and mix well
  • Add warm milk with butter

  • Add 1 egg and mix well. Start mixing with a spatula, later on, wear gloves and knead the dough.
  • Cover the bowl with the dough and let it rest until doubles in size. *(read the "Note")

Filling

  • In the meantime, grind another 5-6 cardamom pods (seeds only, no shell).
    Make the filling for the buns. In a bowl mix ground cardamom, 10 g of vanilla sugar, 1.5 teaspoons of cinnamon, and 3 - 4 tablespoons of caster sugar. Mix well.
  • Now add 120 g of room-temperature butter and mix thoroughly.
    Add 50 g of crushed nuts and mix well. Alternatively, you can use shredded coconut.

Bun making

  • Place the risen dough on a floured surface and cut into 6 pieces.
  • Form a ball out of each piece, place in a bowl, and cover with a towel.
  • Flatten each dough ball into a round shape.
    Now apply and spread the filling onto each piece.
  • Then roll it as I do and cut it in half lengthwise, leaving one end connected. Then intertwine the ends and roll everything into a bun (just follow my lead 😉 ).
  • Place each bun on a greased baking sheet and let them rest for 30 minutes covered with film or a kitchen towel.
  • Preheat your oven to 190°C (375°F).
  • Now, as our buns have grown, is time to brush them with a mix of 1 egg yolk, 1 tablespoon of milk, and a pinch of salt.
  • Now bake them for 15 minutes at 190°C (375°F), then reduce the temperature to 170°C (340°F) and bake for 10 minutes more.

Notes

Many people fear recipes with yeast based dough.
And the main reason why people fail is because they add too much flour, thereby making the dough heavy.
This does not allow the dough to rise sufficiently, resulting in an undercooked finished product (bread, pastry).
If your dough is too wet and sticky, add a bit of flour, but do not exaggerate. Just about 2-3 tablespoons maximum.
